Saturday morning fresh cookie dough, oven preheated, I grabbed a baking sheet… Then I stopped. Lol… Should I use parchment paper, or my silicone mat? I picked one the silicone mat-baked the cookies. Next week, Hmmm I’ll use the parchment paper, my cookies looked different. Same recipe, same dough, same oven, different result; Naturally I blamed the recipe go figure… Welcome back to Cookie Academy.

Both tools are great, but they aren’t the same
One of the biggest misconceptions in baking is thinking parchment paper and silicone baking mats are interchangeable, they aren’t. Both help prevent sticking, both make cleanup easier, but they transfer heat differently. That difference can and does influence how your cookie bakes.
π Parchment Paper
Parchment paper is a favorite for many cookie bakers, and I’m one of them. Why? Because it creates a thin barrier between the baking sheet and the cookies; Some of the benefits are:
Easy cleanup
Less sticking
Consistent results
Great for crisp edges with tender centers
It’s also disposable, making cleanup quick after a long baking day.
π Silicone Baking Mats
Silicone mats are reusable and can last for years with proper care. They’re a great investment for bakers who bake often.
Benefits include:
Reusable
Eco-friendly
Excellent non-stick surface
Consistent spacing guide (on many mats)
Because silicone slightly insulates the cookie from the baking sheet, some cookies may spread a little differently or brown a bit less on the bottom. That doesn’t make silicone better or worse, just different.

Imagine walking barefoot across a sidewalk in July! In Texas! I won’t recommend it, but let me explain why. Imagine wearing thick sneakers on this walk. The sidewalk didn’t change, the sun didn’t change, but what you placed between your feet and the sidewalk changed and also how you experience the heat did. That’s what parchment paper and silicone mats do. They each create a different relationship between your cookie and the baking sheet.
