In the baking world, there is a silent battle happening in kitchen everywhere: The Scoop vs. The Spoon. If you are currently team “Scoop” (dipping your measuring cup directly into the flour bag), I am here to gently convince you to switch side. Here is why taking an extra ten seconds to measure your flour properly is the easiest way to level up your baking game.

  1. You Are Packing a Hidden Ingredient:

When you plunge your measuring cup into a bag of flour, you are essentially using the cup as a shovel. This compresses the flour, packing it tightly into the cup. Suddenly, instead of the 120-130g of flour the recipe expects, you might be using 150g or more. That extra 20% of flour acts like a sponge in your batter. It soaks up all the moisture, resulting in dry, dense, and crumbly baked goods.

2. Accuracy = Consistency:

If you scoop, every time you bake, you are using a different amount of flour. One day you might scoop lightly, the next day you might pack it firmly because you are in a hurry. By using the proper method (the “scoop & level” technique) or a kitchen scale, you ensure that your banana bread/cookies turn out perfect every single time. While a kitchen scale is the Ultimate tool for precision (and less dishes to wash! Lol) you can still improve your baking without one.

  2. Spoon the flour into your measuring cup until it is overflowing.
  3. Use the flat side of a knife to scrape off the excess, leveling it off.

This ensures the flour is light and aerated, giving you a measurement much closer to what the recipe developer intended.
