Apple Cider Donut Bundt Cake (Fall in a Pan Recipe)

Apple Cider Donut Bundt Cake: All the Fairground Flavor, None of the Frying
You know that moment at the county fair, the paper bag of warm apple cider doughnuts, cinnamon sugar coating your fingers, the smell of fried dough and fall air?
This cake is that moment , without the deep fryer, without the mess, and without standing in line for 45 minutes.
It’s a tender, spiced Bundt cake built on reduced apple cider (the non-negotiable step that gives you real apple flavor instead of faint cinnamon sweetness), finished with a buttery cinnamon sugar coating that crackles when you slice it.
And because it’s a Bundt, you get that gorgeous fluted shape, the kind of cake that looks like you fussed for hours when really it’s one pan, one bowl, and a little patience.
🍎 Why this cake wins:
✔️ Tastes like a real apple cider doughnut — not a spice cake
✔️ Reduced cider = intense, actual apple flavor
✔️ Ultra-moist crumb (sour cream + butter)
✔️ Cinnamon sugar coating that clings perfectly
✔️ One pan, no frying, no yeast, no fuss
Most apple cider cakes fail for one reason: the cider is too watery.
Here’s how we fix it:
- Reduce the cider first (non-negotiable) — Simmering 2 cups of cider down to ¾ cup concentrates the sugars and deepens the apple flavor. This is the single step that separates “spice cake” from “apple cider doughnut cake.”
- Sour cream + butter for moisture — The acid in sour cream tenderizes the crumb while the fat keeps everything lush. This cake stays moist for 4 days — unusual for a cider cake, which tends to dry out fast.
- Cake flour for that fine, doughnut-like crumb — Doughnuts have a tight, tender crumb. Cake flour gets us closer to that texture than all-purpose alone.
- Butter-and-sugar coating while warm — Just like the fairground version. Brush the warm cake with melted butter, then press on cinnamon sugar. It creates that signature craggy, sweet crust.
- Freshly grated nutmeg — The biggest flavor upgrade in any fall bake. Pre-ground nutmeg tastes like dust. Fresh nutmeg tastes like October.
The payoff: A tall, golden Bundt with a tender spiced crumb, a real apple cider backbone, and a cinnamon sugar crust that makes people say “wait — this is a cake?”

- 1½ cups granulated sugar(300g)
- ½ cup dark brown sugar (100g) Packed
- 4 Lg eggs Room temperature
- ¾ cup reduced apple cider Cool completely
- ½ cup full-fat sour cream Room temperature
- 2 teaspoon vanilla extract
Cinnamon Sugar Coating:
- 3 Tablespoon unsalted butter (42g) Melted
- ½ cup granulated sugar(100g)
- 1½ teaspoon ground cinnamon
- ¼ teaspoon nutmeg Freshly grated ( grounded-ok)
- ⅛ teaspoon salt
For the cider glaze (Optional-but do it)
- 1 cup powder sugar (120g)
- 2-3 Tablespoon reduced apple cider
- ½ teaspoon ground cinnamon
- ⅛ teaspoon salt
Instructions
- Reduce the Apple Cider (Do This First)· In a medium saucepan over medium-high heat, bring 2 cups apple cider to a boil.· Reduce heat and simmer 18–25 minutes, until it thickens and measures about ¾ cup.· Pour into a heatproof bowl and cool completely — refrigerate if needed.· Warm cider will melt your butter and curdle your batter. Be patient here.
- Prep Oven & PanPreheat oven to 325°F. Grease and flour your Bundt pan thoroughly. Tap out excess flour.
- Mix Dry Ingredients + SpicesIn a medium bowl, whisk together cake flour, baking powder, baking soda, salt, cinnamon, nutmeg, allspice, ginger, and cloves. Set aside.
- Cream Butter & SugarsIn a stand mixer with paddle attachment:· Beat butter, granulated sugar, and brown sugar on medium-high for 3–4 minutes until pale and fluffy.· Add eggs one at a time, beating 20 seconds after each. Scrape the bowl twice.
- Add Wet Ingredients· Add the cooled reduced cider, sour cream, and vanilla. Mix on low just until combined — about 15 seconds. The batter may look slightly curdled. That's normal and fine.
- Add Dry Mixture· Add the dry mixture in two additions, mixing on low until just combined — about 30 seconds total.· Do not overmix. Stop the second you no longer see dry flour. Overmixing = tough, tunneled cake.
- BakePour batter into the prepared Bundt pan. Smooth the top. Tap the pan on the counter 5–7 times to release air bubbles.Bake at 325°F for 55–65 minutes. Check at 55 min: a skewer inserted into the deepest part should come out with a few moist crumbs, not wet batter. Internal temp: 200–205°F.
- Cool — Exactly 15 MinutesCool in the pan for 15 minutes exactly. Not 10, not 20.Then invert onto a wire rack. If it doesn't release immediately, give it 30 more seconds and try again — don't pry.
- Cinnamon Sugar Coating (While Warm)This is the doughnut moment.· While the cake is still warm but not hot (about 15–20 minutes out of the pan), brush the entire surface with melted butter.· In a shallow bowl, whisk together sugar, cinnamon, nutmeg, and salt.· Sprinkle or press the mixture generously over the buttered cake — top, sides, and into the flutes.· Work over a sheet pan to catch the excess and reapply. The warmth helps the coating cling and slightly melt into the crust.
- Cider Glaze (Optional — But Recommended)· Whisk powdered sugar, reduced cider, cinnamon, and salt until smooth and pourable.· Drizzle over the cooled cake in ribbons.· The combination of cinnamon sugar crust and cider glaze is the whole point. Don't skip if you can help it.
Pro Tips for County Fair Quality
✅ Reduce the cider — no shortcuts — This is the difference between “apple cider cake” and “spice cake with a nice name.” If you skip it, you’ll be disappointed.
✅ Use cake flour — It gives you that fine, tight, doughnut-like crumb. All-purpose works in a pinch, but the texture won’t be the same.
✅ Freshly grate the nutmeg — Buy whole nutmeg and a microplane. Ten seconds of work, biggest flavor upgrade in the recipe.
✅ Coat while warm — Butter and cinnamon sugar only cling properly to a warm cake. Once it’s fully cool, the coating slides off.
✅ Don’t overmix — Overmixing develops gluten, which fights the tender crumb you want. Stop the mixer as soon as flour disappears.
✅ Room temp is law — Cold eggs and sour cream will curdle the batter and give you a dense, greasy cake. Set everything out 2 hours before.
✅ Weigh your flour — Scooping from the bag can add up to 20% extra flour, which dries the cake out. A $15 scale fixes this permanently.
✅ Let it rest overnight — Wrap the cooled, unglazed cake tightly and leave it at room temp overnight. The crumb gets even more velvety by morning. Coat and glaze the next day.
How to Store & Freeze
Counter: Wrap tightly in plastic wrap or store in an airtight container. Stays moist 4 days. Do not refrigerate — it dries out the crumb.
Freezer (best method): Slice the cake. Wrap each slice in plastic, then place in a freezer bag. Freezes 3 months. Thaw wrapped on the counter for 1 hour. Reheat slices at 300°F for 5 minutes to revive the crust.
Make-ahead note: Bake the cake 2 days ahead. Leave uncoated and unglazed, wrap tightly. Coat and glaze the day you serve — the coating stays crisp that way.
Note on the coating: Cinnamon sugar coating will soften over time, especially in humid weather. That’s normal. A quick 5-minute warm-up in the oven brings the crust back.
